Just made some more gf cookies for the lovely Brit, but might need to make another batch cause they are disappearing
We’ve been making all sorts of gf muffins and cookies the past few weeks…it’s fun to see which ones the kiddos love. I discovered this afternoon that our Blendtec easily grinds quinoa into a nice fine flour. That was an exciting discovery.
I’ve tried these cookies with garbanzo & tapioca flour, and another batch with quinoa & oat flour. Both turned out deliciously different than typical chocolate chip cookies…both have a delightful coconut taste to them.
gluten-free chocolate chip cookies
1/2 cup butter
1/2 cup coconut oil
3/4 cup raw sugar
1/2 tsp baking soda
1/2 tsp sea salt
1/2 – 1 tsp nutmeg (you can also use cinnamon)
2 eggs
1 tsp vanilla
1 1/2 cups quinoa flour
1 1/4 cups oat flour (the first batch had 2 cups garbanzo flour & 3/4 cup tapioca flour)
2 cups chocolate chips
Bake cookies on greased pan (coconut or olive oil are our favs) at 375 degrees for 9 minutes
makes about 3 dozen cookies

I love to use quinoa flour a lot too! These cookies sound amazing & ooh so tasty!
Yum Yum Yum! oat flour is only GF if you use gf oats!
